You need to rename xstore-it.po and xstore-core-it.po to
xstore-it_IT.po and xstore-core-it_IT.po.

As we can see, all is fine for Core plugin translation now. You can find and translate strings now. There is no need to translate all strings, just texts that are visible on the frontend.
